Gergeti Trinity, above the cloud line

A 14th-century church on a shoulder of Mount Kazbek. The walk up from Stepantsminda takes about two hours; a 4×4 does it in twenty minutes.

When to come, and for what

April – May

Spring

Snowmelt fills the waterfalls and the lowlands turn green; city days without the heat.

June – August

Summer

The Black Sea is warm, the high passes are open, and the villages hold their festivals.

September – October

Autumn

Harvest in Kakheti, clear air in the mountains, and the best light of the year.

December – March

Winter

Gudauri and Bakuriani open, and Svaneti becomes a quiet place with deep snow.

Food and wine

Bread, clay and the long table

Khinkali are folded, twisted and eaten by hand. Khachapuri changes shape with the region — flat and round in Imereti, a boat with an egg in Adjara. Both belong at the same table as mtsvadi, pkhali and lobio.

Wine here is fermented in qvevri, clay vessels buried to the neck, a method still in daily use after eight thousand years. The Kakheti wine route puts a dozen working cellars within a day's drive.
